DF – Spaghetti & Salad

Here is a Daniel Fast friendly recipe. A lot of jarred spaghetti or marinara sauce has sugar in it. There are a few brands that don’t have sugar though, so search ingredient lists very closely. A few nicknames for sugar is evaporated cane juice, corn syrup, high-fructose corn syrup, lactose, maltodextrin, glucose, fructose, & sucrose, just to name a few.

I like to make my own sauce…you can double this recipe and freeze leftovers in meal size portions. I doubled it and had enough for 4 meals for a family of 5.

SPAGHETTI SAUCE

2 (16 oz) cans petite-diced tomatoes w/ juices 2 Tbl olive oil

1 (8oz) cans tomato sauce 1 c. chopped onion

1/2 c. water 2-3 cloves garlic minced

1 (8oz) can tomato paste 1/2 tsp crushed fennel seed

2 tsp dried parsley OR 2 Tbl fresh 2 tsp dried basil OR 2 Tbl fresh

1 Tbl dried oregano OR 2 Tbl fresh 1/4 tsp pepper 1/2 tsp sea salt

***Blend tomatoes, sauce and paste until smooth. (Jeff does NOT like chunky tomatoes, so I put 90% in a blender and blend) Heat oil in large pot or pan to medium/high heat. Add onion & garlic and cook 5 minutes or until onions are soft. Add fennel & cook 1-2 minutes. Add tomatoes & spices, cover & cook on low heat for about 45 minutes.

SPINACH & STRAWBERRY SALAD

Salad doesn’t have to be spinach…but use something other than iceberg or romaine.

Strawberries – washed & sliced

Dressing:

1/4 c. honey 1/2 c. olive oil 1/4 c. cider vinegar 2 Tbl sesame seeds 2 Tbl poppy seeds

1/4 tsp paprika

Make dressing in a glass jar to refrigerate any leftovers. Shake well before each use.

    I LOVE your salad dressing Michelle. I’m making it tonight for first time…I wish I had my pampered chef mixer 😉

    so….can you taste the spinach? if not, that is such a fabulous way to get it in there!!!
