What’s for Dinner – Spinach Salad with Warm Bacon Dressing

One of my favorite things to do is cook.  I love to find new recipes and try them, so it feels like I’m always on the internet looking for my next favorite.  Sometimes cooking is very frustrating to me….especially when I don’t have a plan.  I have been very good at this in the past – making a meal plan.  Planning out a few weeks worth of meals, making a grocery list for my few weeks worth of meals, then going shopping and getting most things on my list.  Let me tell you, it relieves a lot of stress when 5:00 shows up and you KNOW what’s for dinner, you’ve planned it and gone to the store and you have EVERYTHING YOU NEED to make a meal.

So, to be helpful, I thought I’d post our meals…what we eat and possibly a grocery list for this meal…depends on how much time I have!  So – here it goes.

This was our meal Monday night –

Spinach Salad with Warm Bacon Dressing

This recipe is made possible by my Pioneer Woman herself.  She’s my favorite…you can go to her site for step by step directions that include pictures.  Here’s the basics:

Rated: Easy          Serves: 6              Prep Time: 30 minutes

Ingredients
  • 3 whole Eggs
  • 7 slices Thick Cut, Peppered Bacon
  • 1 whole Red Onion, Small (optional)
  • 1 package Mushrooms, White Button (optional)
  • 8 ounces, weight Baby Spinach, Washed Dried And Stems Removed
  • 3 Tablespoons Red Wine Vinegar
  • 2 teaspoons Sugar
  • ½ teaspoons Dijon Mustard
  • 1 dash(es) Salt

Boil the eggs (10 minutes).  Fry the bacon – I tend to burn bacon…keep on meduim heat.  KEEP THE BACON GREASE!!!

***If you want to do the onions and mushrooms***

Put 2 Tablespoons (Tbl) bacon grease in another skillet.  Dice onions and cook in grease until browned and soft.  Remove onions from pan and put on a plate; set aside.  Slice mushrooms thin, add to same skillet and cook slowly until browned.

Chop bacon.

Peel and slice eggs.

Make hot bacon dressing: Add 3 tablespoons bacon grease, vinegar, sugar, and Dijon to a small saucepan or skillet over medium-low heat. Whisk mixture together and heat thoroughly.

Then just put your salad together….make it look pretty or just toss everything together….tastes great either way.  With this, I had picked up a loaf of fresh Italian bread from Wal-mart $1.50….can’t beat that!!  Makes a great, slightly healthy meal.

1 Pkg white button Mushrooms

8 oz. Spinach

Red Wine Vinegar

Sugar

Dijon Mustard

Bread
